How to update stocks levels in a Shopify App from external app?

At work, we decided to stop using the Zoho Inventory app that integrates Shopify and Zoho Inventory because we operate in multiple markets, and the app was syncing orders in the base currency, which was incorrect.

I managed to solve the multiple-currency issue by developing our own in-house Shopify app. Now, I want the ability to update stock levels across all stores connected to our app whenever inventory changes in Zoho Inventory. I’m stuck on how to achieve this one ?
