my team is used to the Shopify themes (duplicate the live theme then update the sections and images for the new campaign; then program it to launch on a certain date, etc).
I would like to know how people are managing this CMS question when using headless.

No, have you? I know there are a million of CMS out there.
I was counting on Shopify to provide a solution as they promised “Hydrogen Visual Editor” with their “Summer ‘24 Edition” but no news since this announcement. I would prefer to avoid building something for a random CMS and then having to build everything again for the Shopify CMS. But if another CMS supports what I mentioned in my post, I might go with it first.
I haven’t personally used Sanity - but I know that it has an easy integration into Shopify, and is popular with developers working with Hydrogen.

One thing to note though is that Utopia is not a CMS, and does not offer CMS functionality, in the same way Sanity would.
Yeah, you’re right the visual editor looks like a tool that helps building layouts.
