For some reason when inserting a link into some rich text it always attaches to the first word rather than the actual selected text.
This seems to be with pasted in text only?

I can’t reproduce this, either with the existing text or by copy-pasting it. I tested on a live store in chrome.
Are you on a development store with some testing features activated?

Mines on a development store too, but one that is being transferred to the client soon (so no early access features).
Seems to happen regardless of browser, I copied and pasted the content from Microsoft Word - even editing after saving the issue was still present. I checked the .json file and there wasn’t anything amiss with the characters either.
Weird. Will follow for updates 
I assume it’s a new bug?
