I’d like to be able to replicate the Order page like so but there is no component for this:

It does exist, but not every component is just ‘one’ component. It’s built of multiple components.
I suggest looking at TextField and Popover.
Agreed that this feels missing from the new Polaris web components. Really it boils down to a component which selects multiple values.
I’d love to hear if there are plans to build such a component eventually? I think for now the best option is to use the app bridge picker api - that has some other things missing (e.g loadMore), though, so definitely some work to do there.
We’re actively working in this area - both for a popover-like component, as well as picking experiences.
