Order's merchant business entity

Good afternoon,

We noticed that an order has a merchantBusinessEntity field (Order - GraphQL Admin) which seems to suggest that a single Shopify store may have or be associated with multiple “merchant business entities”.
Where/how can we add another “merchant business entities” and how can we control/configure which one is used when new orders are being submitted via the Online Store or the mobile POS app?
