I am just curious to whether there are any dates on when the targets marked as feature preview (post-return, post-exchange, reciepts) will become available to everyone?

Feature previews might still be under development and are subject to change.
This is important to keep in mind, and we generally don’t publish when a feature preview will be available while it’s still in preview. The best way to keep up to date with when a feature will be released is via the dev changelog: Recent changes to Shopify’s platform

Thanks for the reply.
I weren’t looking for a specific date, or month, but more of a pointer to: “We are hoping for Q1, Q2, Q3, Q4 this year” or “It’s definitely not on our prioritized task at the moment so we won’t expect it out this year”.
But I’ll keep myself posted using the provided link. 
Depending on the product area, there are sometimes roadmap calendars in the dev docs, eg this one for checkouts product roadmap:
Those (and the dev changelog) would be the best places to get info on when we’re aiming to ship specific new features.
