Like @Temesof said, it depends. You can use Shopify Payments (all available from your list) if it meets your requirements (based on the country your store is targeting). You can also look for other options - there are many different gateways available. Keep in mind that they often differ significantly in terms of transaction fees.
Another popular alternative is Adyen, but you’ll need to meet certain requirements regarding your store’s turnover, as it’s more of an enterprise-level payment gateway.
You’ll need to do some research to find what works best for you. Mainly, check whether it supports your country. If you’re targeting the US, most gateways should fit your needs. I think it’s usually more challenging for European markets, especially the eastern ones.
