I’ve submitted an app for review on Jan 21 and it’s still “We’re assigning reviewer” status. Would be great to have that listing editable during that phase, as a valuable time is practically wasted and could result into more polished listing look.

Fully see the benefit of being able to make changes while in assigning reviewer phase - ideally that phase should be so short that no additional listing page adjustments would be needed, which is the state we’re working towards. Digging into this restriction though to see what the best approach would be.
